Lancaster County PA Mince meat recipe

This was asked for elsewhere...

MINCE MEAT

2# of Chopped or shredded Venison (or beef, I like deer neck roasts for it...)
6 large apples (northern spye are nice at crisp and tart): cored, peeled and diced 1/2"-1/4" bits
1 box (2 cups) Currants
1# of Raisins (Dark or golden and dark mixed)
1/2 box of Cranberry Craisins in Orange flavor (optional)
1 C of chopped pecans or favorite nuts (optional)
2/3C of Dark Brown Sugar
1 1/2C of Cider
1C of white dry wine
1/2C of Cider Vinegar
3/4 of a orange rind grated (optional)
Cinnamon, ginger & Nutmeg to taste
Cloves (sparingly---they can be powerful!) (optional)

Preparation

Simmer apple cider till it reduces to 3/4 Cup (reduce by 50%)
Dump raisins and Craisins (if used) into cider to swell up

In a large pot put in apples (diced); Add liquids from list including reduced cider and vinegar/wine
Add meat
Shred/grate 3/4 of an orange peel (optional-I sub the orange flavored Craisins (dried cranberries soaked in OJ I guess)
Add Cinnamon, Ginger and Nutmeg to taste (Clove is optional but be sparing...ti's powerful!)

Add salt and pepper to taste

Add in Dark Brown sugar and stir well to dissolve ( or add to cider before mixing in)

Add 1 Cup of chopped Pecans or favorite nut (optional)

Cook over medium heat, stirring regularly to keep from burning and mix ingredients. At least 20 min but it should simmer for at least most of that time....

MINCE MEAT PIE

Prepare crust for deep dish pie (I Use the Pillsbury rolled pie crusts in the dairy case---perfect every time)
Spoon in sufficient filling to rim of deep pie dish

Cover with 2nd crust; mold sides with fingers to form fluted edge and seal top and bottom crusts

Cut 3 slits: One for steam and 2 cause Momma said so!

Bake at 400* for 10 min/ then reduce to 350 for 30 min until golden brown.

Let cool; Cut and serve or put in microwave dish and slice cheddar cheese over top, reheat and eat like a meal!

If you try it, don't forget to spoon some hot over vanilla ice cream...OMG! :)

It's been many years since I've had this! I'm talkin probably 35-40, so thanks for posting this Dave! There's a whole generation in my crew that's never had the opportunity to enjoy this.

Never had mince meat pie but it sounds great. If I was much of a cook I'd give it a shot. Think I'll leave it to the professionals.

I had always thought of mincemeat as some scary invention of necessity, much like souse.

This recipe sounds pretty tasty though. I think I'm going to give it a try once I find some currants.

Hey..apples, raisins, meat, brown sugar, spices and cider are all that is really required...

The rest is stuff one learns to add in by trial and error over the years...

I never liked the grated orange peel that much...too powerful, or the cloves... but some swear by it, not at it! :)

Build the basics and then have fun with it... it's a meal right there... whether hot over ice cream, in a pie shell or however you want to make it.

Shoot, I could see it on hot cakes in the morning, warmed up! !

Then again, I used to go to the farmer's market and get Tongue Souse... never would eat puddins though...not that grey stuff with the white swirly in the middle of the pan...

Scrapple, now that is different, I like that, but only the kind with enough corn meal in that browns up in a skillet...some just has too little meal in it and gets like a puddle of snot in the fry pan...nah...
