Grilled Venison Chops

Montreal Venison Chops [aka Back Strap]

1" thick Chops [Tender Loin works good too!]
Olive oil
Montreal Steak seasoning
Bacon strips [thin is better than thick]

Coat both sides of the chops with olive oil.
Sprinkle Montreal Steak season on both sides on the olive oil
Take the back of a spoon and rub the seasoning into the olive oil.
Take an un cooked bacon strip and wrap around the chops and pin with a tooth pick
[Smaller chops can be joined togather and the bacon will hold them during grilling]
Place the chops in a plastic container, top with clear plactic wrap [make sure the wrap seals the meat].
Add chops making layers.

Put the container in the fridge for 12 to 24 hours to marinate. The Montreal seasoning will disolve in the olive oil and soak into the meat.

Grill on Medium High to medium rare. The bacon will be cooked just not crispy. Pull the tooth picks and serve.

My friends swear this is the best Venison they ever had. Most think it's Beef.
