Makes 48 sausage patties
6 lb ground venison
2 lb ground pork
1/4 cup curing salt
1/4 cup brown sugar
3 tbsp dried sage
2 tbsp butter
1 tbsp pepper
1 tbsp crushed, dried chilies
1) Mix venison and pork together in a large bowl. Add remaining ingredients and mix well fry up and eat one small patty to make sure seasoning is to taste and adjust before proceeding.
2) Divide mixture into eight (8) one-pound portions and freeze. When ready to use, thaw one portion and former into six patties.
3) melt butter in a skillet over medium heat and fry up patties, turning occasionally, until browned and cooked through. Serve with eggs and home fries (and invite Cookies over!)
