30 pounds of venison Bacon and 20 pounds of ven jerky

That's what I'm doing today.I got all the snow moved and the Smoker fired up and Im making 30 pounds of Venison bacon and 20 pounds of jerky. It got down to 18 F last night. I think the trees that were budded out are toast. Snow and temps in the teens in April blows.

How do you go about making venison bacon? What cuts of meat do you use?

We bought a venison bacon kit the last time we were at Cabella's, but we haven't tried making it yet.
One time when we were picking up our venison kielbassa & hot dogs from the place we get it made, they gave us a sample package of venison bacon to try. It was great! The problem is, they never made it again.
Have you made it before?
I'm worried about my apple & pear trees too.... it got down to 5* here one night this week. That'll kill the buds real quick.
